MED 45009 - Culinary Medicine: M2 Course Continued
Cr Hrs: 6 Session Length: 2 weeks
This is a face to face clinical rotation. The student should function with increased autonomy in patient care and must demonstrate competency in several of the Entrustable Professional Activities required for graduation. “Let food be thy medicine and medicine be thy food.” Hippocrates 400 BC. Culinary medicine takes this ancient idea and modernizes it through merging of medical science, nutrition, and culinary skill. In this course, students will examine the relationship between diet and chronic disease through study of the evidence-based principles of the Mediterranean Diet using the translational core curriculum, Health meets Food™. Hippocrates also said, “If we could give every individual the right amount of nourishment and exercise, not too little and not too much, we will have found the safest way to health.” So, in addition to the concept of food as health and medicine, students will learn about exercise as a component of lifestyle medicine and the importance of exercise as medicine. The course objectives are to not only stimulate education in nutrition and lifestyle/preventative medicine, but also to develop the ability to confidently communicate nutrition to patients in understandable terms of food and to develop basic culinary skills. Students should develop and set goals for themselves resulting in a more healthful lifestyle. Coursework includes: Review of core M2 modules plus additional module/discussion topics covering mindfulness, food fads, food insecurity, and exercise; Healthful culinary skills taught by professional chefs; and Project work: Development of students personal culinary vision and dietary goals and Group community service project working in collaboration of UTHSC Culinary Medicine and Le Bonheur Healthy Lifestyle Clinic.
